Friendly Inspiration

   While on vacation in California my friend Katie who later joined me my second week decided it would be fun to have a night in to ourselves, cook dinner and watch a movie. We opted to go to Trader Joe's because anyone who has ever been there would know the intense rush you receive from spending so little for SO much! Having been cooking on my own for the past four years it felt refreshing to try new recipes, especially those given to me with love from a trusted source.
   Katie showed me how to make a simple, yet healthy and satisfying dish and I decided to cook it for lunch today and add my own little twist. I call it: 

"Katie 'D'Light recipe for Success"!

What you'll need: 

1/3 cup of olive oil 
1/3 cup of organic balsamic vinaigrette 
10 mini Brussel sprouts
8 baby mushrooms
5 cloves of garlic 
*5-6 raspberries*
Spring of Rosemary





- Chop, chop, chop away at both Brussel sprouts and mushrooms until you have mini cubes of each.

- cut the cloves of garlic into thin slices 'ala goodfellas when they were doing time in jail scene'...lol

- turn the heat on the stove to medium. 

- smear the frying pan with the 1/3 cup of olive oil, throw in the garlic slices and sprig of rosemary to create that robust flavor. 

- next throw in the brussel sprouts and mushroom cubes.

- let simmer for two minutes

- sprinkle balsamic vinaigrette into the pan all the while keep stirring.

- here is my special twist, when I see everything start to get that brown color, I throw in the raspberries to add some sweetness to the dish.
